Thanksgiving is next week, but I’ve already hosted my annual Friendsgiving early this year. Thus while you are all still shopping for your last minute groceries and picking out the perfect turkey, I am facing the seemingly never ending dilemma of what to do with my leftovers. I generally make everything from scratch, including my stuffing, but I never know who is going to show up last minute or who my boyfriend invited without telling me, so I always get an extra box of instant stuffing or two in case of a last minute emergency. Some years I use them, this year I didn’t have to. So there they were just sitting in my pantry.
I’d be lying if I said the day after hosting Friendsgiving every year Rob and I don’t sit in front of Netflix with all the leftovers displayed on our coffee table and binge watch shows and stuff our own faces. But even after our leftover binge-a-thon, I still have so much left, and you can only make so many turkey sandwiches and pot pies before you want to cringe at the sight of green bean casserole and stuffing with gravy and mashed potatoes.So yesterday, after finally getting sick of looking at my extra boxes of instant stuffing in the pantry, I decided to do something about them. I was making chili and really craved cornbread to go with it. So why not use cornbread stuffing mix to make some cornbread? I must say it was one of my best ideas to date. It was quick, easy, and came together in about 5 minutes in my food processor. In total this quick little side dish took about 20 minutes total. Plus, I used up all my extra cranberry sauce making a yummy spread to go with these muffins. This recipe is a total win in my fight against holiday leftovers.
Even though I made these out of leftovers, you could totally make these as an appetizer or last minute dish to take to your own Thanksgiving get together. Or if you want something unexpected, make these instead of traditional stuffing and then your guests have their own individual portions of stuffing. These would also be great if you are skipping the big meal and are going for finger foods and bites for a larger amount of people.
